Chocolate Coconut Bars


These little chocolate coconut bars are so BOOtiful! 

 

INGREDIENTS

  • 2 cups Lily’s Dark Chocolate Premium Baking Chips
  • 2 cups unsweetened coconut flakes
  • 2/3 cup + 2 Tbsp coconut oil
  • 2 Tbsp powdered Swerve
  • Ghost silicone mold 

 

 INSTRUCTIONS

Melt the chocolate chips in a double boiler over gently simmering (not boiling) water. Stir chips constantly until melted.

Pour a rounded Tbsp into each mold (depending on size) and allow to set in the fridge for 10-15 minutes.

Meanwhile, stir together coconut flakes, coconut oil and powdered Swerve.

Spoon mixture over chocolate in a 2:1 ratio (more coconut than chocolate) and press down firmly.

Refrigerate for 30-40 minutes, until firm and ready to eat!
