Pumpkin Chocolate Chip Cookies


Sugar-free pumpkin chocolate chip cookies that you can savor anytime!

INGREDIENTS

  • 1/2 cup canola oil
  • 1 cup 100 % pure pumpkin puree
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon milk
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups flour
  • 1 3/4 cups Lily's Dark Chocolate Chips
  • 1 tablespoon cocoa

INSTRUCTIONS

Preheat oven to 350 degrees F. In a medium bowl combine oil, sugar, pumpkin, egg, and vanilla. In a small separate bowl combine baking soda and milk and then mix with pumpkin mixture. In another bowl combine cinnamon, baking powder, salt, and flour.

Mix the wet ingredients into the dry scraping the sides of the bowl as necessary to mix, but don't over mix. Put the baking chips into a medium bowl and toss with the cocoa. (Coating the baking chips will keep them from sinking in the batter.) Fold the chocolate chips into the batter and add to the batter the cocoa. Let batter sit 10 minutes.

Scoop the dough by tablespoons and place 2 inches apart on baking sheet. Bake 11-12 minutes. Let set for 10 minutes on cookie sheet then place on cooling rack. Yields: 36 cookies.
